What could be better with crisp, clean, Alto Adige whites than a bit of spicy Mexican food?  During a Terlano wine tasting at Hi-Time Wine Cellars last Saturday we proved this pairing to be both unexpected and delicious.  The food was courtesy of Orange County’s own Tamarindo Truck– fresh, traditional Mexican Street food, and the wines were pure Alto Adige.

One of my favorite pairings of the night was a spicy Chipotle Pork Torta with a little Terlano Gewurztraminer.  The pork was slow roasted- caramelized with those smoky, spicy notes and highlighted throughout by bits of pickled onions and a Serrano salsa.  The wine, a crisp, dry Gewurztraminer, helped cool the burn from the chili in the dish, and balanced nicely with a clean acidity and a good measure of fruit. I loved how the aromatics of this wine (typical peaches, rosewater and minerality) maximized the peppery green notes of the chili and cilantro garnishing the torta. Simply stunning- and a perfect way to demonstrate the versatility of Italian wines to pair with any range of cuisines…
