Pairing wine with Animal Fat? Dry, Red, and Bubbly.

If you find yourself stumped as to the perfect pairing for any cheese, cured meat, rich, fatty baked pasta dish or other delicious and decidedly “non-diet”  food, please consider a dry Lambrusco.  This is not your mama’s Riunite!  Great Lambruschi are artisanal, authentic farm wines.    Wines that can be gulped as easily as they can be sipped and savored.  Wines that absolutely BEG for cheesy, mouth-coating richness and savory salted, cured meats.

I found just such a lovely DRY Lambrusco the other day the Los Angeles’ Wine House.  This Lambrusco di Modena from the Opera02 Project at Ca’ Montanari is certified organic as well.  Made traditionally from the local grapes Lambrsuco Grasparossa and Lambrusco Salamino, this is a fine example of dry Lambrusco.  The wine was lovely- a startling, black pepper nose with hints of balsamic vinegar and violets.  On the palate the wine was bone-dry, with a fine bubbly froth and a delicious, palate-cleansing acidity.  Imagine the perfect marriage of this vibrant, freshly perfumed sparkler with a plate of steaming lasagne.  These are the real wines of Emilia-Romagna!
