I love a good cocktail, and Herringbone, a new La Jolla, CA hotspot, does not disappoint.
I was thoroughly impressed with the “Peter Rabbit”, a vaguely sweet, but decidedly herbaceous concoction of Pimm’s #1, basil, lemon and pickled carrot. The whimsical garnish evokes the comfort of childhood fairytales, but the flavors are all grown up.
Crushed basil releases aromas of black licorice and fresh cut grass, while the earthy, minerally note from the pickled carrot is tempered by fresh lemon.
Sweet, then earthy, then saline with a clean-cut finish. Just the thing to sip in the La Jolla sun.
